Also known as Yellow Turnip and Neep, Rutabaga is a root vegetable that is said to originate is Sweden or Russia in 1620. Leaves can be eaten, but the root is by far the most popular part of the vegetable. The root can be baked, roasted, or boiled; it can even be eaten fresh and put in salads if sliced very thin. Often it Rutabaga is sliced into cubes and incorporated with boiling carrots or potatoes.
